Picking the correct oil is one of the best ways to ensure deep frying success, as the oil ensures great taste and flavor, and helps your food become crispy and delicious. But there are so many options in market, which one should you pick? We have listed the most popular types of oils that people opt for in the kitchen for your conderation.
Vegetable oil
It is one of the most popular and affordable options, the smoke point is 400 to 450??C, so it can be used to fry most of the foods. Another benefit of vegetable oil is that it doesn't have a super strong taste so won't detract from the flavours of your food.
Peanut oil
peanut oil is another good choice to use for frying, the smoke point is 450??C. Peanut oil is great for letting the natural taste of your food shine through.
Canola oil
Canola oil is a great choice for a basic, inexpensive oil that will get the job done and leave you with crisp food. The smoke point is 400°C.
Olive oil
Olive oil is more suitable for drizzling on salads and pasta, as well as eating with breads, we do not recommend you use it for frying as it has a very low smoke point.
Lard (melted)
Lard is medium-heat oil, the smoke point is 190°C, if you like, you can use melted lard for frying. It is neutral flavored and will not infuse the food you're cooking. Another benefit is lard reduces the amount of bad cholesterol in your food, so it's healthy to use when cooking with a deep fat fryer.
When the temperature is getting too high, like exceeding 230 degrees, the RESET button pin will pop out. You need to wait at least 30 minutes for the temperature to drop below 150 degrees before pressing the RESET button to reset. You cannot press the RESET button to reset it when the temperature is high.
A single tank fryer use amp about 15A and dual-tank fryer can reach about 30A.
Normally it is not recommneded to use a dual-tank fryer at home. A typical 120V home outlet is on a 15-amp or 20-amp breaker. If you use a dual-tank fryer at home, it may trip your breaker. If you have a big family and really want to use a dual-tank at home, please kindly find a professional electrician to help you install a 30-amp outlet at home to fully power the dual-tank fryer.
We recommend you keep the lid open when trying to frying something. Moisture in the food is going to boil off during frying, so it's important to leave the lid off the tank during frying to let the moisture vent away to atmosphere. If you close the lid, the moisture will gather under the lid and it will drip back into the hot oil when you open the lid, causing the oil to splutter and make hurt to you.
The short answer is YES. If you don't start with enough oil, you may feel like that you need to add more oil to cover your food fully. Adding more oil won't cause dangerous effects, because oil has no water content, it will not spatter. However, it will lower the oil temperature and interfere with the cooking process. It may take some time for the colder oil to heat up to the desired temperature, during this process the food might absorb too much oil and become soggy or greasy.
A kind note: Refrigerated oil can cause excessive splattering, please only add room temperature oil to hot oil.
Our WeChef Deep Fryers are simple and very easy to use, as long as you follow the instruction to use the fryer, you can fry your delicious foods safely. We also have 4 additional safety tips for you.
1. Not fry Frozen Food. Frozen food may cause the oil inside the deep fryer to bubble and splatter, it is very dangerous. Please make sure it's thawed and dried before adding it to your deep fryer.
2. Always wear Gloves when frying. If the hot oil happens to splash out of your deep fryer, wearing a pair of gloves can give your hands enough protection. Our fryer contains a pair gloves.
3. Add Salt after, not during or before cooking.
4. Fry in small batches. If you overcrowd the frying basket, it can cause undercooking, uneven cooking, and overflowing of the oil.
Frying a piecce of perfect fish is not hard once you have mastered the below techniques.
(1) Keep The Fish Dry. Use paper towels to pat dry your fish before putting it into oil.
(2) Choose The Right Kind Of Oil. It is recommended to use vegetable oil, peanut oil, or canola oil, as these have high smoke point and neutral flavor.
(3) Fry at right temperature. The ideal temperature range for most fishes is between 350F and 375F. If you are frying catfish, the temperature should be set at 365F.
(4) Fish tends to cook pretty quickly, normally 3-5 mins is enough, the time length can vary depending on the length and thickness of your fish. You can cut your fish into several pieces if needed.
(5) Cook in small batch. If you fry so much pieces of fish at once, it can lower the temperature and the fish may not be fried properly.
Unfortunately we do not have gas fryer. All our Deep Fryers are electric and each fryer contains power cord with plug, you can plug it into suitable outlet directly. Compared to gas fryers, electric fryers are usually more efficient when heating up and deliver hastened heat recovery, it can give you the ability to cook more items in faster succession, which is particularly important for a business. Electric fryers are also more mobile as you won't have to tie them to gas lines.
Heating water in our deep fryer is possible, as our deep fryer can reach up to 392??F, however, we do not recommend you mainly use it to boil water as the deep fryer is not meant for this purpose. The Deep Fryer is designed to heat oil and if you keep using it to boil water, the tank and the heating element may get rusted.
The temperature range of our wechef deep fryer is 140°F to 392°F, it is good for frying most of the dishes, like French Fries, onion rings, egg rolls, fried chicken, fried fish, panko shrimp.
(1)Can it fry cream filled donuts?
Of course you can fry cream filled donuts in our WeChef Deep Dryer. The optimum temperature to fry donuts is 365°F, please heat the oil to 365°F and place a small batch of cream filled donuts into oil , when they are all golden brown, take them out of the tank and drain the donuts on paper towels.
(2)Can it fry empanadas?
Yes you can fry empanadas. Please deep-frying it in vegetable oil at 360°F for 1 to 2 minutes per side, until lightly golden.
(3)Can it fry funnel cakes?
Yes please use vegetable/ canola/ peanut oil and heat it to 365°F, then add the batter of funnel cake to fry for 2-3 minutes or until golden brown and cooked though. Flip the funnel cake halfway through.
It depends on what type of deep fryer you had bought. If you bought the one with a drain in front of it, like YES4937 or YES1660, you just need to unplug the unit, wait for the oil to cool down, then open the drain to empty the oil. If you bought the one without a drain, like YES1658 or YES1659, the tank is removable, please kindly unplug the unit, wait for the oil to cool down, lift the heating element, then remove the tank and pour out the oil.
Using this Deep Fryer to keep milk is not recommended, as this product is designed to heat oil and fry something like kitchen, fish, French Fries, onion rings, etc. We have a food warmer which has 2 round pots and it is great for keeping liqud like milk or soup in restaurants, supermarkets, fast food shop or other commercial places. The temperature can be adjusted from 86 to 176 degrees Fahrenheit, you can set the ideal temperature according to your need.

How much oil you should put in a deep fryer mainly depends on what food you are going to fry and what kind of deep fryer you have bought.
Different deep fryer has different capacity and it normally has a minimum and maximum oil line in the tank, so you can add oil to somewhere between these 2 lines, please do not exceed the maximum oil line.

It is very easy to clean the deep frery, there are 6 simple steps for you to clean the deep fryer.
1. Disconnect the deep fryer and let the oil cool down completely, then empty the oil;
2. Fill the sink with water and a few drops of dishwashing liquid, then soak the basket into a sink to get rid of grease.
3. Fill the tank with water ( the water should not exceed the max oil line ) and a few drops of dishwashing liquid, use soft bristle brush or soft sponge to remove grease and gunk. When cleaning the heating element, please be careful and wash/wipe it softly, make sure not to damage the temperature control probe and the connecting wire.
4. After the oil on the tank and heating element has been cleaned, please empty the soapy water and rinse the fryer with clean water, and dry it thoroughly with paper towels.
5. Now it is time to wash the basket. Please use soft bristle brush to remove food particles and grease from the fry basket. Rinse and dry.
6. Do not forget to wipe down the outside of the deep fryer with a soft sponge.
There is no necessary to install an exhaust fan system. Typically, a deep fryer is not going to create a lot of smoke if you have used it properly. It will smoke when:
(1) The oil has reached its smoke point. At this point, we recommend you use high heat oil which has a high smoke point, like peanut oil, vegetable oil, they are higher than 4o0??C and it is good for frying. Do not use low smoke point oil, like olive oil.
(2) The food is wet. At this point, we recommend you alway pat dry the food before frying. It is not safe to fry wet or frozen food.
(3) Too much oil in the tank. It can cause splattering and smoking which will make your kitchen smell terrible. Don't fill the deep fryer with too much oil and too much food.
(4) The temperature is too high. Set the temperature below the smoke point of the oil will stop the unwanted smoking.
For most of our deep fryers, like YES4937, YES1660, YES1658 and YES1659, the black plastic handle on the basket is detachable, actually it comes unassemble and you can install/uninstall it to the basket easily. The black handle is anti-slip and it is more than 20cm long, which can prevents scalding and brings safe operation.
For our fat deep fryers, like YES5078, the handle on the basket is not detachable, it was fixed and you can't remove it.
Most people use the deep fryer in the indoor kitchen, but if there is a power source outside and it is powerful enough to run the deep fryer, the answer is yes, it can be used outside. There are a number of things that you have to take into account when using it outside:
1. It is unsafe to use in wet or damp weather, if it is raining, water falling on it may get inside the connection and could short out the electrics, so please do not let it exposed to rain or snow directly.
2. Have a solid and heat-proof surface to set the deep fryer on while cooking.
3. keep playing children or animals away from the deep fryer.
The temperature knob has celsius setting and fahrenheit setting on it. We currently do not have a dust cover for the deep fryer. When not in use, you can use a cloth/tarp to cover the deep fryer so it can be protected from dust or other elements.

If the temperature is not high, but it can only get hot by holding the RESET button, then the RESET button is broken. Please take off the back cover to check if there is any loose wiring or connection inside.
It takes time for the heating tube to heat up, and it will also be affected by the outside temperature. Generally, it takes about 40 minutes from the lowest to the highest temperature. It is recommended to warm up before use.
Please try to press the RESET button on the back of the deep fryer. And please make sure that the heater is sitting level in the deep fryer. If the heater is not sitting level in the deep fryer, it will lead to a bad connection, and the heater will not heat up.
It is a safety hazard to use the deep fryer on a wooden surface. The deep fryer will generate heat when it is energized, and the oil temperature is also high. A wooden surface is not heat-resistant. It is recommended to use the deep fryer on slate or high-temperature resistant materials.
There are 4 black rubber foot pads screwed into the deep fryer bottom. You can adjust them according to your specific needs to see if the problem can be solved. Please try to find screws that are a similar size at the local hardware store and replace the screws on the foot pads in case the foot pads were not screwed into the deep fryer bottom.
Please help confirm if it's leaking oil from the drain nozzle or the connection between the deep fryer and the drain.
If it is leaking oil from the drain nozzle, you may need to replace the drain.
If it is leaking oil from the connection, you may try to tighten the internal elbow connected with the drain.
Please take the drain and extension ring cover off. And put more thread tape on it then put them back on.
If you need a hose to drain oil, it is recommended to use an oil-resistant hose, and it must wait until the oil is cold before draining, otherwise the hose may fall off or melt.
Commercial Power Supply
The deep fryer comes with a 3 prong plug that can be used with an US standard 30A socket. The commercial power supply means that the power socket used by the customer should be able to support this high-power electrical appliance.
Requirement of Socket
Due to the high power of the deep fryer, it is best to use it with a wall socket. We do not recommend using an extension cord or a power distributor. Please confirm the power rate is suitable for you before purchasing.
It is not NSF certified. Considering safety issue, there is a temperature limiter inside the product. When the temperature controller fails and continues to heat up to 230 degrees, the temperature limiter will cut off the power supply to avoid excessive temperature and fire.
Normal use can generally be used continuously for 7-8 hours.
Considering that the machine's long-term uninterrupted operation will affect its service life, It is recommended to let the machine cool down after working 8 hours before continuing to work.
The timer on/off switch is designed to activate the function of the timer. When the switch is On, the timer will work properly, the fryer will be off automaticlly according to the time set by the Timer. When the timer switch is Off, the fryer will not be affected by the time set by the timer, that means, even if you have set the timer, the fryer will not off when it reaches the time you set up. The deep fryer will heat up to the desired temperature, then cool down, then heat up again until you turn off the deep fryer manually.
